Not so long ago in the summer of 2011 one young man was returning to the mountains of British Colombia from a vacation on the beaches of Costa Rica when he had found out about an illness in the family back in New Brunswick. After spending the last 9 years working back/front of house in restaurants across Canada and the majority of the last 7 years on the west coast he decided it was maybe time to go back to the east coast and spend some time with his family.
Having a love for the food & beverage industry and since an early age always wanting his own business it only seemed to make sense that opening a restaurant was the route that he should take. Being in his mid 20′s there was no possible way for anyone his age to come up with the funds to open a restaurant. Following the food industry and the massive trend that has been sweeping the USA and Vancouver, Gourmet food trucks seemed to be a much more realistic option for a young entrepreneur wanting to get into the industry with minimal funds.
After a trip down to Vancouver from Whistler in the summer of 2011 and talking to a successful gourmet food truck owner it was a given. This is what he could take back to the east coast and bring the gourmet food truck revolution to the people of Fredericton. It was in this moment that FRESH MOBILE BISTRO was born!
